Carrot Apple Ginger Soup

The rich, creamy warmth that is soup during the winter is a perfect dish for making on a rainy weekend or night in. Soup is a healthy happy medium between dishes that make you feel your best and comfort food. Our carrot apple ginger soup is a super tasty bowl for eating well when it might be too cold for a salad. Whip up this easy to make batch the next time you’re feeling something not only warm and comforting, but rewarding too.


  • ½ onion, chopped

  • 2 garlic cloves , minced

  • 1 tbsp ginger grated

  • 1 medium sized potatoes, chopped

  • 1 pound carrots ,chopped

  • ½ apple, chopped

  • ½ cup Genesis Apple Juice

  • 2,5 cups vegetable broth

  • ½ cup coconut milk (spare 1 tbsp for topping)

  • Salt and pepper to taste

How to:

  1. Pour a small amount of oil in a large saucepan, then add onions and sauté until lightly browned.

  2. Add garlic and ginger, cook for another two minutes.

  3. Add potatoes, carrots, apple and cook a few minutes before adding apple juice and vegetable broth. Bring to a boil, add a lid and reduce to simmer.

  4. Cook for 25 minutes or until vegetables are soft. Set aside and let cool slightly.

  5. Use immersion blender or regular blender in batches. Add coconut milk, salt, and pepper (and any other spice you’d like!) to taste. Transfer to bowls and top with coconut milk. Enjoy!
