Strawberry Rhubarb and Tonic

This Cinco de Mayo we decided to spice up your typical gin and tonic! With flavors of strawberry, rhubarb, and basil we have the perfect way to celebrate this fun May holiday! Not only refreshing, but a new take on flavorful and fruity drinks. A great recipe to take into summer too!

For the strawberry-rhubarb puree:

  • 1 cup rhubarbs, sliced

  • 1 cup strawberries, slice

  • 1 cup sugar

  • 1 cup water

For the rest of the drink:

  • Genesis Juice (we used Strawberry Lemonade)

  • 1 oz gin

  • Sparkling water

  • Thai Basil

  • Strawberries

  • Ice

How to:

  1. Add water & sugar to a saucepan. Add rhubarb & strawberries once it boils. Cook on low heat for 15 minutes. Let cool. Add to a blender and blend until almost smooth (we made it a bit chunky with bits)—you can do either smooth or chunky. If you prefer making this into a syrup, simply strain in a fine mesh cloth to remove pulp.

  2. Rim two glasses with salt. Add two tbsp of strawberry-rhubarb puree to a glass. Add a handful of ice and cold gin. Fill rest of glass with Genesis Juice & sparkling water. Gently stir then top with basil, fresh sliced strawberries and lime. Enjoy!
