1 cup rhubarbs, sliced
1 cup strawberries, slice
1 cup sugar
1 cup water
Genesis Juice (we used Strawberry Lemonade)
1 oz gin
Add water & sugar to a saucepan. Add rhubarbs & strawberries once it boils. Cook under low heat for 15 minutes. Let cool. Add to a blender and blend until almost smooth (we made it a bit chunky with bits), you can do either smooth or chunky. If you prefer making this into a syrup, simply strain in a fine mesh cloth to remove pulp.
Rim 2 glass with salt. Add 2 tbsp of rhubarb/ strawberry puree to a glass. Add a handful of ice and cold gin. Fill rest of glass with Genesis Juice & sparkling water.. Gently stir then top with basil, fresh sliced strawberries and lime. Enjoy!
