Tofu Scramble

Ingredients:

  • 1 package firm tofu

  • ¾ cup zucchini, chopped

  • ½ cup mushrooms, chopped

  • 1 cup spinach

  • Pinch of salt

  • 2 tbsp nutritional yeast

  • ½ tsp turmeric

  • ½ tsp paprika powder

How To:

Sautee veggies for 3 minutes. Crumble tofu and spices, cook for another 5 minutes or until lightly browned. Add to a plate, top with sauerkraut, or hot sauce (optional). Serve with vegan cornbread and Genesis juice of choice. Enjoy!
