Pancakes with Genesis Apple Compote


Pancake Mix

  • 1 cup almond milk 

  • 1 tbsp apple cider vinegar

  • 1 cup unbleached flour 

  • 1 tbsp baking powder 

  • 1 tbsp butter, melted

  • 1 tbsp maple syrup 

  • 1 tsp vanilla

Apple Compote

  • 2 cups apples, diced

  • ¼ cup Genesis Apple Juice

  • 1 tsp cinnamon

  • 2 tbsp butter

  • 1 tbsp brown sugar

How To:

Melt butter under medium heat, add brown sugar and let dissolve. Add apple, cinnamon and apple juice. Let simmer for 20 minutes or until apples are soft. Set aside while you make the pancakes.

Combine milk and vinegar in a glass bowl or cup. Combine flour, baking powder and salt. Stir in the melted butter, maple syrup, vanilla and milk/ vinegar mix.  Grease a non stick pan and add batter when hot, we used about ¼ cup but add more if you want them bigger. Flip after a minute or until browned. Makes 5-8 pancakes depending on the size you prefer. 

Serve with compote, dash of cinnamon, drizzle of maple syrup, walnuts, and non-dairy whip cream (optional). Enjoy!
